A luxurious treat that is delicious on its own or can be added over pasta or rice.

How to make this in 3 easy steps:
(for 3 servings)
Step 1 – Prepare the mince
Add your pea protein mince to boiling water (use double the amount of water than there is mince), then instantly reduce the heat to low and let it simmer for 20 minutes.
In the meantime peel and chop the onion and garlic.
Step 2 – Form the meatballs
Combine all the meatballs ingredients together to form a slightly firm mix.
Rub a few drops of olive oil on your hands. Using a spoon, scoop out a small amount of the mix and use your hands and the spoon to form a small ball shape, then add this to your baking tray or airfryer (line your tray with baking paper).
Repeat this step until you have enough balls in your tray, keep them spaced out so they can cook thoroughly.
Air fry for 7 minutes or bake for 10 minutes at 180 degrees (keep an eye on them and once golden and crispy you can take them out).
Step 3 – Pan fry & enjoy
Pan fry your meatballs in a little olive oil for 3 minutes, stirring to fry all sides.
On the other side of the pan (or another small pan) add in all the ingredients for your sauce and mix everything well. Heat for 3 minutes then pour the sauce over the meatballs. These unique tapas are perfect on their own or you can dip some fresh bread into the sauce.
Enjoy these fresh or keep some in the fridge for up to 2 days.

For 3 servings
For the meatballs mix: 120g of Pea Protein Mince (hydrate it first, see step 1) 1 Large onion, finely chopped 4 garlic cloves finely chopped 60g of breadcrumbs A handful of fresh parsley, finely chopped 50ml of oat milk A tablespoon of extra virgin olive oil | For the sauce: 2 garlic cloves, finely chopped or minced 1 tin of tomatoes 1 teaspoon of paprika ½ teaspoon of garlic powder ½ teaspoon of italian herbs mix ¼ teaspoon of oregano Salt and pepper to taste |
